Yogurt Parfait Bar with fresh fruit, granola and nuts

A choose-your-own-adventure yogurt snack. Perfect for a quick breakfast, a snack or even a dinner if you can’t even cook!
This is a silly recipe. It’s more of an idea. Inspiration to eat something other than cereal or a cookie for breakfast, lunch or snack.
 
I realized how much junk I was eating last week, so I went to Trader Joe’s and wandered around and bought all kinds of healthy things to make for meals. I was checking out and realized all I had were things for dinner. I hate making breakfast and lunch on the weekdays.
Back when we were kids and my dad was taking some classes at night, my mom would make us yogurt and apple sauce and top with with cheerios (which is still delicious!). So I bought a tub of low fat vanilla yogurt, some fresh berries and some amazing coconut granola.
I went home, made a parfait in a rose colored glass, sat down to eat it and was accosted by my daughter who wanted one, too. RIGHT THIS MINUTE because she was starving.
Both of my girls were then asking for parfaits every morning. To keep things interesting (and because I ran out of raspberries!) I made some containers of topping I could just shove on the table and they could make a yogurt bar.
I use granola, nuts, Rice Krispies, coconut, dried cranberries, mini chocolate chips, apple sauce, crushed pineapple, chopped up mango, cut up strawberries, blue berries, banana slices (I do these fresh for each yogurt bar because sliced bananas get nasty.)
It’s easy, my kids think it’s the best meal, and no one is eating total junk.

Yogurt Parfait Bar

Ingredients

  • 12 oz low fat Vanilla yogurt
  • raspberries
  • Rice Krispies
  • coconut
  • dried cranberries
  • mini chocolate chips
  • apple sauce
  • crushed pineapple
  • chopped up mango
  • cut up strawberries
  • blue berries
  • banana slices
  • granola
  • nuts - pistachios, peanuts, almonds...

Instructions

  1. Scoop 1 cup of yogurt into each bowl. 

    Top with your choice of toppings. 

    Devour!

I add whatever I have on hand as toppings. Choose your own adventure.

Pro tip: Only include one super indulgent item. I usually do all fruit and granola and a small bowl of chocolate chips so my kids don't make sundaes
