Grocery Store Grab – Strawberry Chicken Salad with almonds, feta and avocado

Quick and delicious salad – loaded with chicken, strawberries, avocado, almonds and feta and finished with a balsamic glaze. Best part — the gaze is in a bottle. Easy peasy!
Grocery Store Grab is a quick recipe that requires very little besides running into the grocery store and assembly. I always grocery store grab at Trader Joe’s because my heart and wallet belong to them. I love the friendly employees, the selection, the toffee almonds by the checkout.

I only eat salads when it’s warm out. I know! But when we have cold weather, I just don’t want to eat cold food. Every summer, I start eating a version of this salad. I have since 2003, I think.
Fruit in a salad is very 2003. But they were so popular for a reason — they are so good!
This one has crunch from the romaine¬†and almonds, sweetness from the strawberries and creaminess from the cheese and the avocado. The avocado and feta are actually so much, I think a more involved dressing is lost on this salad, so I just use a drizzle of balsamic glaze. (Balsamic glaze is pretty common in the grocery stores here — it’s usually by the salad dressings and olive oil. We use it on everything at our house!)

Easy enough for dinner any night, even if you are on your way home!

 

Strawberry Chicken Salad with almonds, feta and avocado

Ingredients

  • 1 bag chopped romaine lettuce
  • 8 large strawberries
  • 8 oz cooked chicken breast
  • 1 avocado
  • 1/4 cup chopped roasted almonds
  • 1/2 cup feta
  • drizzle of balsamic glaze

Instructions

  1. Chop the strawberries, chicken breast and avocado into bite sized pieces. 

  2. Layer romaine, strawberries, chicken, avocado, almonds and feta in 2 large bowls. 

  3. Drizzle with balsamic glaze.
