Chipotle Corn Steak Tacos

Steak Tacos made on the grill in minutes. Fast and easy dinner on a weeknight or a perfect Cinco de Mayo snack!

 

Who doesn’t love tacos? These ones are great because you can customize them how you like them.

“Juicy steak” is the new request around our house. My 6 year-old has discovered how great a steak on the grill can be. We grill any type of steak, dice it and let everyone assemble what they like. I usually put out corn, shredded carrots, shredded cheese, queso fresco, avocado, salsa and chipotle sauce. The kids assemble their own and the shredded carrots and corn guarantee they will eat more than just meat and cheese on a tortilla.

Since we had kids, I spend so much more time adjusting our old favorites so they aren’t “too spicy”. A lot of the adjustments have made things we loved sad and bland. I finally figured out that if I have a great sauce, I can make a ho hum (and kid-favorite) recipe a grown-up win.

The chipotle sauce is a must have. It’s spicy, it’s creamy and it takes 2 minutes to make. And it makes these tacos. Any tacos.

Chipotle Steak Tacos

Ingredients

  • 10 oz steak - I usually use sirloin
  • 8 small tortillas - corn or flour
  • 1 cup corn (off the cob if it's in season, frozen if it's not)
  • 1 cup shredded carrots
  • 1 cup Monterey jack cheese, shredded

Chipotle Sauce

  • 1 tbsp adobo sauce
  • 1 chipotle pepper from a small can
  • 3/4 cup mayonnaise
  • 1/2 lime

Instructions

  1. Season the steak with salt and pepper and grill to your desired temperature - we do medium-medium well. 

  2. While the steak grills, make the chipotle sauce by combining the chipotle pepper, adobo, mayo and lime in a food processor or blender until smooth.

  3. Allow steak to rest for 10 minutes. Cut into bite sized pieces.

  4. Serve all ingredients at the table and have everyone build their own tacos!

Recipe Notes

To make this a full meal, I usually serve with a salad or a side of rice and beans.
